Some common condiments in daily food
Hi dearies,
Finally its weekend.Time flies real fast & soon its gonna be November... Exam fever is around the corner but I'm sure all the PSLE students are enjoying their themselves after the stressful period.. Well it's Party Time !!!
Anyway, I was going thru some of the pics gallery in my phone & came across 2 condiments which I thought of sharing in here.. Its commonly used in our malay delicacies day to day basis.. However I have gv it a little twist as usual to suit my taste.
Some of you may be wondering how does chili padi looks like or the type that I'm using.. Here it goes the pics for your reference.
Let's move on to the very first condiments: -
Chili Padi Kicap @ Bird eye chili with sweet soya sauce
(This condiments is best for noodles like Mee Soto/Soto Ayam/Porridge & also for dippings for fried fish & also beef lungs (paru)
Ingredients:-
Handful of bird eye chili @ chili padi
Few cloves of garlic
Salt & Sugar to taste
Sweet soya sauce
Methods: -
- Blend all the above ingredients together in your food processor/blender.
- Season with salt & sugar according to your individual taste
- Store it in your air tight container or bottle of your choice & refrigerate it.
PS: I don't use lime/calamansi juice as it will gv the sourish tangy taste aft some time which I dont fancy. If you prefer, you can add abit of calamansi/lime juice in it.
Happy trying !!! :)

Another Experiments....
Hi all ....
Wow again I have been awhile for quite long... Well due to some health reason.. Without wasting any time I will be uploading all the post dated & updated pix together with the simple recipes to go along... Hereby, my very own version of Nasi Ayam Penyet aka Smash Chicken wif Chicken Rice. This is dish originated from Indonesia. You can get it @ any indonesian stall in Singapore but unsure in other countries. This dish goes well with the Sayur Asam aka Tamarind Veggie Soup. Actually there's 2 different kinds of version. The one I have here are using Chicken Rice instead of plain rice. Some stall uses Fried Rice instead. There's what most of us confused about. If I get it right, the original version of this indonesian originated dish uses plain rice instead of chicken rice. The key thing in this dish will be the powerful spicy chili & the fragnant spices from the chicken.. Its so yummy..
Lets move on to the recipe: -
Chicken Rice Ingredients:
Rice Home-made Chicken Stock (you can use those chicken rice paste with comes in the bottle like Woh Hup & Lee Kum Kee)
Pandan Leaves aka Screw pine leaves - cut em into pcs or you can tear it.. This is to gv the fragnant smell
(if you unable to get it, you can use lemongrass as an alternative)
Salt to taste
Chicken Marinade:
Any parts of the chicken
Coriander
Cumin
Fennel
Abit of curry chicken powder
Mix of garlic, onion & ginger paste
Salt to taste
Condiments:
Bird eye chillies
Red chillies
Shallot
Garlic
Shrimp paste
Lime zest
Lime juice
Salt
Brown sugar
Olive Oil
Garnish:
Lettuce
Fried tofu
Fried tempe aka fermented soya beans
Baby tomatoes
Abit of sweet soya sauce
Calamansi
Methods:-
Chicken rice
- Wash the rice till the water run clears then add in all the above ingredients including the chicken stock & cook it in the rice cooker.
- Fluff it with a fork when its cook to prevent breaking the rice grains.
Chicken Marinade
- Fry the coriander, cumin & fennel without any oils till its fragnant. You can grind it or use or pestle & motar to smash them coarsely.
- Wash the chicken clean & pet it dry with kitchen towel as the marinade need to be a thicker ones.
- Add all the ingredients to the chicken in a zip lock bag & season well.
- Marinate it for atleast an hour or best keep it overnight.
Condiments
- Cut/Slice the shallots, garlic, bird eye chili & red chillies
- Fry them with a lil of olive oil or any cooking oil till fragnant
- In the food processor or blending, blend all the fried ingredient with the shrimp paste coarsely
- Once its done, bring all the blended paste to the pan with lil of olive oil. Fry them till fragnant.
- Add in the lime zest & juice, brown sugar & salt to taste.

Quicky Seafood Marinara
Hi dearies,
Had a long lazy day today.. I hv plan the menu for today however due to some laziness in me, I have decided to settle down with my very own quicky seafood marinara. @ the same time, Im expecting some guests over the evening. So this meal is simply great to enjoy apart of those malay traditional food - longtong , rendang etc.
Anyway here goes my .....
Quicky Seafood Marinara
Ingredients:
Any choice of pasta (I used spaghetti)
1 bottle of any ready-made spaghetti sauce (I used Prego Traditional Sauce)
Mince garlic
Fresh mushroom or button mushroom in tin
Prawns
Squid
Lala/Clams
Tobasco/Cayenne Pepper
Salt to taste
Methods:
- Heat a wok/pan with little oil, sweat the minced garlic for a few sec.
- Throw in the squid, prawn & lala/clams in it, have a quick toss before adding the whole bottle of sauce in it.
- Simmer for abt 5-10mins.
- Season with tobasco/cayenne pepper & salt to taste.
- Dish out while its hot with a plate of choice of spaghetti & sprinkle ur favs cheese.
Thts so simple & easy to make especially for those working mom's or when you have unexpected guess. Another option is, you can replace all the seafood with fish slices or tuna chunks. Toss in the pasta & dish out to the oven bake dish. Sprinkle with mozza cheese or any of ur fav cheese then broil it for abt 5-10mins.
Happy trying !!! : )

Specially for hub.
Hi peeps,
I'm back on here again. Well, now my blogs gonna be on those are 'expired' updates meaning foodie that I've cooked some time back or weeks back.
As usual before we get started, here a little updates on my day before proceeding for my back dated food updates. Oooh well, I took a day off from work today due to my daughter. Unfortunately she have rashes on her neck but luckily nothing serious according to the doc. Its such a relieve. Apart that, did a spring cleaning of my kitchen after so long. Finally its all in order & hoping to get more containers for my storage purpose. Basically its a quite relaxing day w/ no deadlines for the day.
Ok... let get back on to my 'expired' updates thts Ayam Masak Merah aka Spicy Tomato Chicken as requested by my dearest hub before leaving for his business trip. This dish is a mixture of little sweetness from the tomatoes & sugar & the spiciness from the chilli paste. Best eaten with Nasi Tomato aka Tomato Rice (similiar to Ghee Rice) or best with Lontong (Rice cake/Pressed Rice) otherwise as usual will be a place of hot popping jasmine rice.. yum yumm ..As usual, I dun have exact measurement..
Lets take a look @ the recipes as follows: -
Ayam Masak Merah aka Spicy Tomato Chicken
1kg of chicken (any parts) but I've used mind wings & drumlets
Chilli paste (measurement according to the heat tht you wan in your dish)
1 big onions
2-4 cloves garlic
Tomato puree
2-4 pandan leaves (screwpine leaves) - wash & tie them into knots
Lemon grass - bruise
Cooking oil
Salt & sugar
Methods: -
- Marinate the chickens parts with lil tumeric powder & salt & fry it till its half cooked.
- Grind the chilli paste, onion & garlic.
- Heat up the wok with little oil, throw in the lemongrass & pandan leave. Sweat it real quick till it gv u a nice fragrant.
- Pour in the grinded chilli paste with onion & garlic & fry it till it changes the colour or we called it pecah minyak (the oil will flood @ the sides).
- Season it tomato puree, sugar & salt. The taste shud balance. bet the spiciness & sweetness.
- Cook it for a lil while more before adding in the half cooked chicken in it.
- Mix them well & simmer for abt 5mins before dishing them out on a place.
- Serve with a plate of fragrant jasmin rice, longtong or tomato rice.
Well thts all folks for now. Please take note that this recipe is purely experimented by myself & not adapted from anyone blogs. Please do credit if you gonna share the pic/recipes.
PS: Apology if my illustration is not tht good. Please do pm me for more clarification.
Got to run now.
I will be back soon..

I'm back......!!!
Hi peeps.. wow finally I'm back after so long of my disappearance. Time flies so fast. Unknowingly, the fasting month that's the month of Ramadhan (as per our Islamic calender) is just around the corner.
Anyway, little update about myself, lately I have been attending some baking class & I find it beneficial for me. Ooh yeah I have decided to come up with my very own baking project, testing & experimenting.. not forgetting this would enable me to sharpen my baking skills over the time. Some friends of mine have been asking if I'm into business & well that's not my main purpose/goal @ the moment. But yeah, maybe in the near future.
Right now, my next goal is to have my blog up & updated with all the things I have been doing time to time.
Next I will be uploading some of the recipes/food that I have been trying/experimenting during my absence.
Do check it out in my blogs...
