Dinner

Finally the school gonna re-open tmr after 1 wk break for the PSLE test paper marking day. Its a very slow & quiet wkend. Well I have decided to cook a simple chicken rice. Experimenting with some of the spices for the fried chicken. I was thinking to make white chicken to go along with the chilli dipping & rice.. However Im planning to cook this dish for 2 days. So I settled down with simple fried chicken. In my ingredients there will be no exact measure as its all thrown in spices.. or what I called it masak campak-campak.

Chicken Rice

Rice
Shallots
Ginger
Garlic
2-3 pandan leaves
Chicken broth/granulas/cubes
Salt to taste


Simple Fried Chicken

Chicken Wings (you can use any chicken parts
Sesame Oil
Sweet soya sauce
Coriander powder (you can pound the whole
Cumin powder (you can pound the whole
Tumeric powder
Salt to taste
Black pepper

Chilli Dippings

2-3 tbsps Chilli boh/paste ( you can replacew with deseeded fresh chillies)
Juice from the limau kasturi (you can subtitute it with lemon juice)
Salt to taste
Sugar
Chicken broth


Methods:

- Wash the rice till it runs clear water.

- Heat up the rice cooker pot with a lil cooking oil, fry the blended items till its fragnant. Add in the granulas or cubes together with the pandan leaves. Fry for a few mins. Add in the washed rice in & fry for a few mins before pouring the water or the chicken broth

- Cook the rice as you cook normal rice however you need to increase the water a lil more.

For the chicken

Marinate the chicken parts with all the ingredients for atleast for an hr or more. Fry it till golden brown before serving it with the popping hot cooked rice.

Chilli Dippings

Mix all the ingredients in a small bowl. As for the consistency, it depends how diluted you want it to be. As for the sugar level, it depends on your taste bud and it shudnt be too sweet either. The sauce should have a balance taste of spiciness, sourish & sweetness.

Serve the chicken rice either popping hot or room temperature.

Lunch @ Popeye, Century

Been hearing tht Popeye name quite often. The chicken is good, the mashed is heaven, serving is worthy compared with KFC. However the location are too far for me to travel. Matter of fact Singapore is not a big country. As far I know dat they have outlets at Changi Airport & Singapore Flyer.. Lately I get to know tht they have open any outlet at Century Sq, Tampines.

Without any plans for the day, I decided to bring my daughter out for our late lunch. We rch there around 3.30pm yest noon. It was so crowded. But of course its bigger than the KFC, BK & Mc. But too bad, I hate those long queues.

I was just wondering what should I order for both of us since its our first time beside whipped potato a must try thingy. I have order 1 kid's meal which consists of a drumlet, a biscuit, a drink & a mash potato whereas mine was the maxi meal which consists of the 1 drumlets, chicken tenders, chicken small drumlets, mashed potato, biscuit & drink. It cost us abt $15 ++

Honestly, I would recommend the heavenly mashed potato to those who loving it. Its the best compared with KFC or Arnold. I can taste the spicyness & the chicken bits. Its totally something new & interesting to my taste buds. Im sure this is gonna be my all time favs.. I even packed 2 large whipped potatoes & 2 cheesecakes for our dinner.

Hi all...

Finally I'm back in here after ages. The reason of my disappearance due to my late mom have passed away last mth. Today is the 1st mth after she passed away. I'm totally shocked & lost when I found out she have left all off us. I tried picking up myself slowly. And being a sister & mother to my 23yrs old brother is not tht easy especially after wht we have gone thru. However alhamdullillah I've manage to pull through slowly with the moral support given by my aunties, cousins & my husband.

I will always missed my late mom. She is the best mother in the whole world. Nothing can describe for those moments, advise that she have given us. I will always pray that she will always be happy wherever she is. I will do my best to give/do anything to brighten her soul. Insyallah.
