Watz for dinner?!! Hmm..

Its been ages since the last time I have update some news or foodie choice here.. here is my another experimental dish adapted from Rozzan recipes list.

Well I got home last night & decided to cook for dinner as its been a while I have cooked for hubby. Yest I found 2 recipes from 2 different blogger whome Im following. Once of them is Abg Rozzan & I cant remember the other blogger. Anyway the I found 2 interesting recipes which I wanted to try out thats Ayam Lemak Padang & Ayam Masak Ungkep. Since Im unable to decide, I make my hubby to pick any one of my 2 fingers w.o telling him e menu for e day (being childish)

Guess wht... he pick Ayam Masak Padang. Tho its my first time trying this dish, I have made a lil changes to the recipe. The final result was good. Very happy that he loves it.

Here I goes with the menu for the night....




AYAM MASAK PADANG


Bahan-Bahan :-

1 ekor ayam (kira-kira 1½ kg) / 1kg chicken wings –dibersihkan, potong ikut suka
3 gelas santan pekat (diambil dari 1 biji kelapa) / (400 ml santan kotak + 200 ml air)
1 cawan air
¾ cawan minyak masak
4 ulas bawang merah kecil –dihiris (utk tumis)
8 helai daun limau purut


Rempah Kisar
2½ sudu besar ketumbar (naz goreng ikit coz I like the frangrant smell of it)
8 btg lada merah
8 btg lada kering / 1-2 tbsp chili paste
1 inci halia
½ inci kunyit hidup / 1 tsp serbuk kunyit
3 biji buah keras digoreng
1 inci lengkuas (dititik)
1 btg serai
15 ulas bawang merah
6 ulas bawang putih
garam secukup rasa

1 sudu teh gula
jus dari 1-2 biji limau kasturi (I use 4 biji limau kasturi)


Cara :-

- Panaskan minyak dalam periuk Tumis bawang merah yg dihiris tadi hingga kekuningan. Kemudian masukkan rempah kisar dan daun limau purut lalu masak hingga rempah garing, baru masukkan ½ cawan air. Teruskan masak sehingga terbit minyak dan bubuh ½ cawan air.

- Bila lauk terbit minyak sekali lagi, baru masukkan santan pekat. Biarkan hingga mendidih,lalu masukkan ayam, gula, jus limau dan garam. Masak sebentar sehingga ayam empuk dan sesuaikan rasanya mengikut citarasa anda


PS: I have adapted the resipe from Rozzan & have made few changes for my own experimental.

Baked Tuna Mac

This is my family all time favs especially over the wkend. My daughter love this alot & always remind me to bake it for her over the wkend. Both hubby & daughter loves having this baked mac with dashed of Lingam Chilli sauce.















Baked Tuna Mac

Ingredients: -

Elbow macaroni
1 can Campbell's Mushroom Soup
1 can of tuna
1/2 cup of fresh milk
Parmesan cheese
Chilli Flakes (Optional)
Handful of green peas
1 red onion - chopped coarsely
Chicken hotdogs (Optional)
Cheese slices/Mozarella cheese
Salt to taste

Methods:-

Preheat oven at 170 - 180 Celsius

Boil mac in salted water until al dente.

In a large bowl, pour in the mushroom soup, fresh milk, tuna & hotdogs (if you are using). Mix them well. Then add in the onion, green peas.

After mixing well, add in the macaroni & make sure its well coated with all the ingredients. Sprinkle the Parmesan cheese, salt & chili flakes.

Pour the mixture into the oven proof baking dish or baking tin. Top up with cheese slices or mozzarella cheese.

Baked for about 25-35mins. Baking time depends on individual ovens.

Serve it hot with your fav salad or sides.

Note:

Mac is added last as I don't wan to break them in pieces. Amt of cheese to use depends on individual. If you are not a cheese freak, then you can cut down on the cheese slices/mozzarella cheese. As for the chili flakes, its depends on individual.

Tabbouleh Salad

I have always been wondering what is this couscous thingy till I come across it during a cooking series, Khana Khazana from the Zee Tv. So here I'm trying it out in my own ways. As you can see this pix, it looks soggy coz I have added more lemon juice in it. So why wait, try it out..

Tabbouleh Salad














Ingredients: -
1 cup dry couscous (I use San Remo brand)
1-2 medium tomatoes, seeded & diced
handful fresh coriander, chopped
Juice of 1 lemon
1 tbsp olive oil
Salt & pepper


Methods: -

Add the dry couscous to 1.5 cup of boiling water. Turn to low heat and cover for about 3-5 minutes. Couscous is ready when the water has evaporated and the couscous is tender (if it's crunchy, it's not done). Remove from heat and fluff it around with a fork. Set aside and cool.

When couscous is completely cooled, add tomatoes, coriander & lemon juice.Mix well, removing any clumps in the couscous.

Dizzle olive oil and season with salt & pepper to your individual preferences.

Serve with your fav baked chicken.

Note: You can subtitute the lemon juice with abt 1 tbsp of balsamic vinegar for the kick taste & chopped onion for the crunchy taste.

My day...

Finally its home sweet home after my 7am shift... A nice good weather to be at home snuggling up with my pillows... playin with my lil princess & definitely listening to my fav list of music..

Today nothing interesting at work but daily is a learning day for me.. Busy is norm especially today is jus not my day as I feel so sick.. However I still enjoy myself at work with my colleagues..

Guess wht ... Im actually looking forward for my shoft june getaway... heheh .. Very excited abt it.. Well lets see how things turn out, definitely I will update those beautiful pics tht I will be snapping away soon in Kuala Lumpur...Mmmmm..other than tht, sad & moody .. Jus dun ask me why...

I know its very short & boring one..jus my mood is not right.. I will be back with more updates & yes with pictures this time..

mmmm....

Wow... Today its a good day for me..Have a good talk with my manager... & yess finally my probation period is over after a long 6mths.. Yess its been pretty throughout the period... Training...endurance...& most importantly... we keep learning things & adapting to changes ... Now... I have plan for the next thing... thts to TRAVEL yipppie!!!!

Now... home sweet home.. relaxing infrt of my laptop thinking of things to do...Well... its time laze around with my princess...Till next time....
